This recipe came from our church cookbook. I like this recipe because I can use either chicken or beef. I have tried both and I like the chicken the best. You can leave out the crushed red pepper which is what I do if you don't like your food spicy.
Combine the first 7 ingredients to make marinade.
Slice Chicken or beef into strips.
Add to marinade and marinate for 2 hours.
Quickly saute onions and peppers in oil until lightly browned.
Remove from pan.
Saute marinated meat about 4 minutes.
Toss with vegetables.
Spoon into flour tortillas.
Serve with avocado slices and sour cream.

A simple sauce tossed with your favorite pasta for a quick yet healthy dish. Sun-dried tomatoes and mushrooms provide a nice meaty texture for those who choose not use meat. Personally, I add a pound of jumbo shrimp at the end and substitute clam juice or seafood broth for chicken broth. This meal is served with a caesar salad and Texas toast After the sauce has cooked to desired thickness, just toss the pasta and you are ready for a treat. My idea, my version. Takes less than an hour minutes to prepare.
One Dish MealNice quick lunch for yourself or for you and your honey. Recipe can be cut in half to make for one. We like to add 1 or 2 of the variations, there's always something left over in the fridge to be used up, use your imagination. (the oil can be replaced with veggie cooking spray, it works just as well) Our standard is deli chicken slices, a mix of cheddar and parmesan, green pepper sticks, and chopped green onions and fresh cilantro, served with hot salsa. Yummy!!!
